I have to say that my favorite project was the waterproof blanket.  We've used it so much already...to sit on, to draw on, to drive on, to keep us warm in the wind and rain. It folds up so small, I'm contemplating making another with the Valentine's vinyl tablecloth sitting in the closet :).
